The grapes were hand-picked and gently whole cluster pressed to extract the flavors without color. The 2nd fermentation took place in bottle as per the traditional Méthode Champenoise. The wine was left in bottle in contact with the lees for 4 years before disgorgement.
Medium intensity with crisp acidity followed by notes of pomegranate, granny smith apple, buttery pastries, nutmeg and almond.
