Bibi Graetz

bibi graetz

Bibi Graetz Winery was founded in 2000 on the hill of Fiesole, overlooking Florence, by Bibi Graetz, an artist turned winemaker who fell deeply in love with wine. Coming from a family of painters, he brought creativity and vision into viticulture, focusing on old vineyards and native Tuscan grape varieties such as Sangiovese, Canaiolo, and Colorino. His philosophy emphasizes natural viticulture, high-altitude sites, and poor stony soils to capture the purity and elegance of Tuscany’s terroir. Caymus

caymus vinyards

Caymus Vineyards was officially established in 1972 in Rutherford, Napa Valley, by the Wagner family, who had been farming grapes on the property since the 1940s. Before founding the winery, the family sold their fruit to other producers, but Charles Wagner and his son Chuck decided to craft their own wines, focusing primarily on Cabernet Sauvignon. The name “Caymus” comes from George Yount’s Rancho Caymus land grant, itself named after the Wappo villages that once existed in the region. Over time, Caymus became renowned for its bold, approachable style of Cabernet, particularly the Special Selection, which has earned widespread acclaim and awards. Today, Chuck Wagner and his family continue to run the winery, producing not only Caymus but also other labels such as Conundrum, Mer Soleil, and Emmolo, all rooted in the family’s tradition of quality and innovation.

Dominus

dominus estate winery

Dominus Estate is a renowned Napa Valley winery near Yountville, owned by Christian Moueix since 1995. The estate is centered on the historic Napanook vineyard, first planted in 1838 by George Yount, and later managed by notable figures like John Daniel Jr. Moueix initially partnered with Daniel’s daughters in 1982 before becoming sole owner.

The vineyard, located on the Mayacamas foothills, is dominated by Cabernet Sauvignon, with smaller plantings of Cabernet Franc and Petit Verdot. These varieties form the backbone of Dominus’s acclaimed flagship wine, while the estate also produces Napanook (mid-tier) and Othello (entry-level). Farming is dry and yields are carefully managed through crop-thinning, a technique Moueix also applied at Pétrus in Bordeaux.

Dominus is equally famous for its striking winery, designed by Swiss architects Herzog & de Meuron, built from stone-filled gabions that provide natural light and temperature moderation.
