The vines at Butteaux are planted on clay, Kimmeridgian soil. Much more restrained on the nose, this needs time (and aeration) to coax out of the glass. Powerfully structured, this Butteaux will keep very well, given the density and concentration on show. A classic Chablis in character. (AH)

It was interesting that the 2021 Butteaux chez Michel was still quite expressive on both the nose and palate, in comparison to the two previous wines, as it had not yet started to shut down from the mise. The bouquet is beautiful, offering up scents of lime, apple, a complex base of chalky minerality, beeswax and white lilies. On the palate the wine is vibrant, full-bodied and complex, with an excellent core of fruit, zesty acids, lovely focus and a long, classy and impeccably balanced finish. 2024-2050.
